Il Drago e le Sette Colombe IGT Toscana Rosso

Donatella Cinelli Colombini’s all-female wineries dedicate a wine to a man: the enologist Carlo Ferrini, who, from the outside, guides the production of the wines. He is the dragon that one can see in the label, while the doves who surround him are the seven women who work in the winery and sell the wine. Colour very dark ruby red. Aroma fine, complex with a prevalence of spicy notes, clearly connected to the barrel-ageing. Taste powerful wine with good structure.
Serve at 18°C.

 
     
 
Cenerentola DOC Orcia Rosso
The wine region Orcia was officially designated in the year 2000 between the Vino Nobile and the Brunello territories. There are similarities between the wine and the young lady in the tale of Cinderella (Cenerentola). Both have older step sisters; in the case of our Cenerentola DOC Orcia, these well-known siblings are the two wine regions nearby: Brunello di Montalcino and Nobile di Montepulciano. To produce Cenerentola we use Sangiovese Brunello and Foglia Tonda, the latter being a varietal from this region abandoned around a century ago. Colour dark ruby red. Aroma fine, full and complex. Taste recalls ripe small red fruits and spices. Serve at 18°.
 
     
 
Chianti Superiore DOCG

The extraordinary 1997 harvest launched the new denomination Chianti Superiore. The word superior denotes that there is more selection for this type of Chianti, that it reaches a higher quality. This wine is produced with grapes from vineyards surrounding the villa at Colle. Colour lively ruby red. Aroma intense vinous, floral with a clear reference to violets. Taste harmonious, dry, sapid, suitably tannic evolving in time into greater softness. Serve at 18°C.

 
     
 
Leone Rosso Orcia Rosso Doc
Leone Rosso IGT Toscana
The rampant lion is the symbol of Donatella Cinelli Colombini’s ancestors, who built Fattoria del Colle in 1592. The wine is obtained from Sangiovese and Merlot grapes from the vineyards surrounding the estate. Colour ruby red with violet hues. Aroma fragrant, fine with floral and fruity components. Taste full, warm, immediate and soft. Serve at 18°C.
 
     
 
Rosa di Tetto IGT Toscana Rosato

At Fattoria del Colle a rosé wine was already being produced twenty years ago. It was called "Acqua di tetto" and was a summer wine especially appreciated by the tourists who spent their holidays in the countryside. When Donatella Cinelli Colombini took over the Fattoria del Colle, in 1998, the wine changed name and became "Rosa di tetto". The roses which give their name to the wine are three very old climbing plants which rise towards the roof on the facade of the villa and of the chapel so as to grow under the roof tiles. The production of rosé wine has begun again in 2007, after a break of a few years, with this splendid harvest that has permitted the arrivai in the winery of lots of excellent Sangiovese grapes. Colour: brilliant pink. Aroma: ethereal, distinct, fragrant, very fine, fiorai, with net hints of green apple. Taste: dry but soft, with a nice body, hints of berries such as bilberries and raspberries. Serve at 10-12°C.

 
     
 
Sanchimento IGT Toscana Bianco

Sanchimento, San Clemente in medieval language, is the patron saint of the chapel at Fattoria del Colle and it is also the name of the vineyard which surrounds it; this is the only vineyard with white grapes on the estate. It contains Traminer vines, an unusual variety for Tuscany, but here it has found the right habitat thanks to the altitude of 404 metres above sea level. Colour: Straw yellow with greenish hues.
Aroma: delicate, with net fiorai and fruity perfumes. Taste: fresh but well balanced in its acidic and alcoholic components, persistent with hints of peach and apple San Chimento. Serve at 8-10°C.

 
     
 
Vino Santo DOC Chianti
Like every Chianti farm, Fattoria del Colle has lofts full of Vin Santo barrels called “caratelli.” Our Vin Santo is aged in an attic of the 16th-century villa. Here the Vin Santo is aged for at least five years.Colour golden. Aroma very intense, very persistent and ethereal. Taste pleasant, full warm and soft. Serve at 10-15°C.
 
     
 
Grappa di Chianti

This is obtained from grape-skins which are fermented and steam-distilled in a discontinuous still straight after the racking. They are aged in oak casks. Colour white and perfectly limpid. Aroma fine, intense, frank, ethereal with definite hints of the grapes. Taste intense and persistent. Alcohol – 43° vol.
