In Siena the Christmas cake that is a must is called Panforte born as peppered bread to give energy it became a noble cake in honour of Queen Margherita

By Giulia Mencaglia

Follow me I will give you the recipe… The old tradition of this Christmas cake from Siena goes back about a 1000 years . The name Pan Forte (Panes Fortis) came from the fact that the water in the fruit used to make the cake, kept it soft but at the same time gave origin to moulds which gave and acidic taste to the cake as well.

In 1505 the Panforte began to be a great success thanks Sister Berta, who, worried about the health of the soldiers, modified the recipe so that is might become energetic for the body and spirit, adding an abundant dose of pepper (Pan Pepato)

During the years the Panforte has not been changed much until 1879 when Queen Margherita di Savoia came to visit the Palio city, her visit was anticipated by an inspection by her chamberlain who also had the job of choosing the dishes for the “royal palate”. He had a more delicate version prepared for her eliminating the melon and substituting the pepper covering with icing sugar. That is how the Panforte Margherita was born

At Fattoria del Colle the panforte is prepared by the pateisseur and served freshly baked during the Christmas holidays and most of all during the New Years Eve dinner.

Christmas cake: recipe for panforte Margherita of Siena

The Sienese traditional Christmas cake is panforte in the sexy version called “panpepato” and in the version created for the Queen Margherita and I’ll give you the recipe

Many many years ago in Siena they used to say that the panforte “panpepato” << united families >> because of its aphrodisiacal virtues that made the critical moments in marriages something of the past. True or untrue this characteristic of the panforte also caused some high level problems. It seems in fact that when Queen Margherita di Savoia came to visit the Palio city, her visit was anticipated by an inspection by her chamberlain who also had the job of choosing the dishes for the “royal palate”. When he came to learn about the aphrodisiac virtues of the panpepato he immediately excluded it from the menu and the Sienese population, most contrite when they heard that their most famous and delicious cake was being disdained, decided to make a version more “chaste” version” that was christened panforte Margherita in honour of the queen.

At Fattoria del Colle the panforte is prepared by the pateisseur and served straight away during the Christmas holidays and most of all during the New Years Eve dinner.

Summer farm party

Aroma of roasted meats, the taste of the traditional  “cinta senese prosciutto”, the folk rhymes, the informal elegance of the noble park, the pleasure of meeting new friends…….. this is  “Fattoria in festa” where Donatella Cinelli Colombini wishes to invite you

Fattoria del Colle in Trequanda - Courtyard

Fattoria del Colle in Trequanda - Courtyard

Go back in your mind, about 100 years ago, to when in Fattoria del Colle, in a corner of the Chianti area yet to be discovered, there was a festival in honour of San Clemente, patron saint of the estate chapel. The ovens were lit for baking the bread, chicken and cockerels were roasted, all the guests seated at the same table and  there was always someone who played the accordion so others could dance, and then there were those who wished to play the games of Cacio or Panforte.
And now all starts again, like once ago, and Fattoria del Colle in Trequanda organizes these feasts once again.
The  programme prepared by Donatella Cinelli Colombini wishes to offer her guests an experience of Tuscan culture so as to complete the experiences of  tours of the cities of art, the appreciation of the landscapes and obviously of the Tuscan way of life. So the programme “Fattoria in festa” is born,  in the park near the old olive mill, in the middle of Fattoria del Colle. To find the party it is sufficient to follow the singing and one finds the laid tables, the housewives with ladies in their hands so as to serve the “ciancifricola” and the “ zuppa trequandina”,  just round the corner is the outdoor oven where baking trays of onions and potatoes are ready. The poorer version of grilled meats includes sausages, pork ribs and chicken, while a cart journeys among the tables offering pecorino cheese and hand sliced “prosciutto di cinta”. The lunch finishes with the real farmhouse tart, just baked. Poor dishes and rich wines from the wineries Fattoria del Colle in Trequanda and Casato Prime Donne in Montalcino: Brunello, Chianti and Doc Orcia (Leone Rosso and Cenerentola) award-winning wines appreciated by the international press.
The feast culminates with a dance, the “ballo del trescone”, the sienese country dance which is most popular, easy to learn and fun to dance.
The “Fattoria in festa” program will begin Sunday August 7th and will become a regular Sunday appointment at Fattoria del Colle in Trequanda. A proposal which approaches the new tourism trend of the 3g , three generations: grandparents find reminders of their past, their children find cultural references, and the grand children a fun way to learn. Donatella want to propose it also to those who want to find an unusual and fun way to celebrate with friends, or to groups visiting Italy who are looking for a way to understand the history of the most beautiful countryside in the world.  Donatella Cinelli Colombini wishes to offer all an unforgettable experience of her land and its history. In this same spirit she has opened up to the public the historic halls at Fattoria del Colle with guided tours and has collected hundreds of antique objects from the farming tradition, now visible in the winery as if a decoration. This is modern Tuscany with a tradition heart and a modern mind
