A prestigious location and a dinner at the restaurant Arnolfo in Colle di Val d’ Elsa, which is well worthy of its 2 Michelin stars and where we experienced the debut of the Chateau wine glass from Baccarat
Albiera Antinori, Cesare Cecchi, Marco Pallanti and Abbruzzese Lucia were all at the lunch. Wonderful authentic culinary masterpieces created by Gaetano Trovato arrived at the table, all of which were served with impeccable style by his brother Giovanni: a choice of Blue Lobster Risotto with Lemon and Saffron from San Gimignano or Cinta Senese Pork with Red cabbage and Beetroot. A dream lunch, with stunning wines such as an almost twenty year old Ornellaia, which we tasted in glasses which were designed and created in 2011 by one of the most ancient and famous crystal producers in the world.
A revolutionary wine glass, it has a long stem which is 7 and a half millimeters
in diameter and a very large bowl with a nearly flat base which starts closing immediately to a very narrow mouth. Therefore the surface of the wine which is actually in contact with the air is amplified, whilst the top opening of the glass is very narrow so as to concentrate the aromas of the wine. The total effect is fantastic. Everything becomes amplified: both the strengths and the weaknesses of the wine. So the Chateau Baccarat glasses ensure that you enjoy and fully appreciate your top quality bottles of wine by amplifying all their fine aromas but the glasses do make poor wines almost undrinkable.
It is definitely the perfect wine glass for people who love wine and appreciate tasting good wines, you must try one and see for yourself. A few years ago there were some glasses called ‘Impitoyable’
These were also what you could say ‘ruthless’ towards the wines they held, they had similar bowls and an equal ability to disclose the defects and qualities of the wines, but they were much uglier. The Chateau Baccarat glasses instead are beautiful to look at and are perfect for the new female wine consumers who perceive and appreciate the aromas of the wine much more than men seem to.
The revolutionary character of the glass does not end here, there is only to be this one shaped wine glass which is to be used for all the different types of wines, for whites, reds and even reds which have been matured in barrels. This is a shock for those who are used to thousands of different glasses for each type of wine. And a shock even for Baccarat itself, with its 250 year history of crystal wine glass production. It has been producing its princely glasses ever since I can remember, in fact at my grandparents’ house in Colombini I can recall a locked cabinet which contained these special glasses which were only to be used on very important occasions to accompany the very valuable Sèvres dinner service.
The Chateau Baccarat glass is therefore a new revolutionary design which demonstrates an amazing capacity for renovation from a century-old French crystal producer, they have put more emphasis on designing a glass whose main function is to present the wine in the best way possible for the benefit of the wine and the wine taster, and they have put all other characteristics and considerations for the design into second place.
These glasses, although not traditional in design, should not feel as if they are unworthy to be seen on a grand table, they are from a producer whose glasses are normally viewed as being the Princes of crystal wine glasses so it is a good test of courage to produce such a different design of glass. What remains of the traditional Baccarat wine glass in this new creation? Well clearly, the sound of the crystal, the characteristic effect that only lead crystal can give when you touch it.
