Il Drago e le Otto Colombe IGT Toscana

With the arrival of Valérie Lavigne, the female consultant wine maker, the staff in Donatella Cinelli Colombini's all-female wineries has increased. The flying doves of the label, symbol of the Prime Donne project, have become 8. So this is why the wine Il Drago e le 7 colombe becomes "Il Drago e le 8 colombe" with a restyling of the label and in the grape variety.
The production location remains the same, Fattoria del Colle in southern Chianti. The new arrival is Donatella's husband Carlo Gardini. He is the dragon that appears on the label. He arrived three years ago, and while at the beginning he had a more administrative role and he managed the restaurant, now he also has an active part in some oenological projects, such as creating a passito, and more recently a Vin Santo "occhio di pernice", which however with be available for tasting only in a few years time.
Carlo has also created some new recipes together with the chef of the restaurant Osteria di Donatella

Cenerentola Doc Orcia

Doc Orcia is a new denomination born in 2000 between the Brunello and Vino Nobile regions. Just like the Cinderella in the fairytale the wine has two stepsisters, more famous and richer than her. Who will the Prince Charming choose?

Sanchimento Igt Toscana bianco

sanchimentoSan Chimento or rather San Clemente in the Medieval language, is the patron saint of the chapel at Fattoria del Colle which gives its name to the Vineyard surrounding it, and which is the only one with white grapes. It has Traminer vines, an unusual variety in Tuscany, but here it has found an ideal habitat thanks to the altitude, 404 above sea level.
Sanchimento IGT Toscana is the only white wine produced by Donatella Cinelli Colombini.

Leone Rosso Doc Orcia

leone rossoThe rampant lion is the symbol of Donatella Cinelli Colombini's ancestors, who built Fattoria del Colle in 1592. It is a Doc Orcia wine obtained from Sangiovese and Merlot grapes from the vineyards surrounding the estate. Fattoria del Colle.

Vin Santo del Chianti Doc

vinsanto donatella_cinelli_colombiniJust like every farm in Chianti, Fattoria del Colle has lofts full of Vin Santo barrels called "caratelli". At the moment the Vin Santo is aged in an attic of the 16th century villa. Here the Vin Santo is aged from four to seven years

Chianti Superiore Docg

chianti superiore_2044The word "superior" means that there is more selection for this type of Chianti, that it reaches a higher quality. This wine is produced with grapes from Sangiovese vineyards surrounding the villa at Fattoria del Colle, south of Chianti.


 

Passito aromatico da uve Traminer

Donatella Cinelli Colombini has a husband and a cellar master who are both passionate about sweet wines. They taste them, they buy them, and it was quite a while now that they wished to make a passito with the Traminer grapes from the small vineyard above the chapel at Fattoria del Colle. Carlo Gardini and Barbara Magnani's insistence did not convince Donatella who on the contrary only loves red wines aged in barrel, so every year she postponed the production of the passito. The  "passito" subject caused continuous quarrels between husband and wife.
In the end Carlo took things into his own hands, he bought the baskets for the drying out of the grapes, a small vat and an oak barrel. Barbara took care of the grapes and the wine daily. At the end the result obtained id even better than their dreams: only 350 bottles of but of exceptional quality. Those who taste the passito are overwhelmed by the aroma, the elegance and the richness of this wine born from a quarrel
 

Rosa di Tetto Igt Toscana rosato

rosa di_tetto_igtAt Fattoria del Colle a rosé wine was already being produced twenty years ago: it was called "Acqua di tetto". When Donatella Cinelli Colombini took over the Fattoria del Colle, in 1998, the wine changed name and became "Rosa di tetto". The roses which give their name to the wineare three very old climbing plants which rise towards the roof on the facade of the villa and of the
chapel so as to grow under the roof tiles. The production of rosé wine began again in 2007 after a break of a few years. The tourists who spend their holidays at the agriturismo Fattoria del Colle in Trequanda enjoy the taste of  this young and fresh wine during summer stays.

Grappa di Chianti

Grappa di Chianti sold in Donatella Cinelli Colombini's winery Fattoria del Colle is obtained from grape-skins which are fermented and steam distilled in a discontinuous still straight after the racking.
It is aged in oak casks.
