For those who do not already know the Fattoria del Colle, it has at its centre a sixteenth-century villa in an ancient hamlet transformed to accommodate tourists in rooms, apartments and villas, with three swimming pools, a restaurant, a banquet and conference room, the area for natural well-being, and the cooking school.

In the splendid cellar for Chianti Superiore, Supertuscan and Doc Orcia wines, a new room is dedicated to the Sangiovese vines, which is told through a video showing the vineyards in the 4 seasons and at 4 different times of the day.

 

3 TOP WINES FROM FATTORIA DEL COLLE FROM THE SAME 2018 VINTAGE

The rainy summer of 2018 did not discourage us, we picked the least promising grape first, leaving the best in the sun for as long as possible. A heart-pounding situation with adverse weather forecasts which, fortunately, turned out to be wrong. The harvest went on with the sun. The rain came the day after the harvest ended.

The quality of Cenerentola 2018 lies in our courage as  winemakers and the name of this wine depends on the similarities between the famous fairy tale and the Doc Orcia to which it belongs. This denomination is very young. It was born on February 14, 2000 in the midst of the territories of two older important and famous “sisters”: Brunello di Montalcino and Vino Nobile di Montepulciano.

 

The temperatures in the pre-harvest period gave Il Drago e le 8 Colombe 2018 its distinctive feature: fine, complex and deep aromas.

Finally, a small but significant detail, against all weather forecasts, the rain came the day after the end of the harvest. Not a small detail, because, interpreting the vintage in the “twentieth century” style, the best grapes, such as those for the Il Drago e le 8 Colombe, were picked last. A stroke of luck that by drinking this wine is clearly perceptible.

 

Donatella Cinelli Colombini worked three years to produce her Spumante Metodo Classico, preparing a Sangiovese vineyard with different characteristics from those destined for the classic Tuscan red wines, <<when Josef Reiterer told me to produce more grapes, it was a shock for me>> she says referring to the legendary creator of sparkling wines “Arunda”, the South Tyrolean winery 1,200 meters above sea level, who supported her throughout the project as a consultant.

For Donatella Cinelli Colombini’s Brut Rosé, a dark and cold room (12 ° C) was built in the cellar at Fattoria del Colle. Investments, but above all a lot of manual skills with the traditional pupitre where the bottles are turned day after day by the cellar staff of the first Italian winery with a staff of only women.

Cenerentola wine is born in the vineyards at Fattoria del Colle from Sangiovese and Foglia Tonda varieties. The latter is an ancient Tuscan vine that had been abandoned for more than a century. With a great work of tests and experiences, which lasted 15 years, the cultivation, vinification and maturation was successfully developed to make it express its full potential. It is less elegant than Sangiovese but more powerful and together they make a different but satisfying and harmonious blend.

 

DESCRIPTION OF IL DRAGO E LE 8 COLOMBE 2018

It is a Supertuscan wine, an IGT Toscana “author’s wine” where the vines are used following creativity and not tradition. In Il Drago e le 8 Colombe, three different grapes are used: Sangiovese, the main Tuscan variety, which gives the wine elegance, Merlot (20%) which adds pleasantness and then Sagrantino (20%) which increases the structure. All the grapes are grown, vinified, aged in cask, bottled and stored on the estate.

 

A SECRET ABOUT OUR SPUMANTE BRUT METODO CLASSICO 2018

The grapes were cooled, deprived of the stems and skins through pressing. The free-run must fermented for 12 days at a temperature of 13 ° C. The wine without its lees remained in the cold for 5 months, in February it was bottled and began aging on the yeasts for 24 months. Then the disgorgement took place, the addition of the liqueur d’expeditione and the final capping. Marketing began after 6 months.
