I NOT ONLY ENJOY WINES WITH LOW NATURAL ALCOHOL CONTENT, BUT I ALREADY MAKE ONE: THE ROSA DI TETTO IGT ROSE’. LOW -NAT WINES ARE LESS PROCESSED AND TASTE BETTER

by Donatella Cinelli Colombini, winedestination, Casato Prime Donne Montalcino, Fattoria del Colle Trequanda

A wonderful article by Gianluca Atzeni in “Trebicchieri” explains the reason for the great enthusiasm surrounding “LOW-NAT” wines—a category with an alcohol content similar to beer, yet which is unequivocally wine. This enthusiasm has led to amendments to the production regulations for appellations such as Orvieto, Pinot Grigio delle Venezie, Prosecco, and Garda.

LOW-NAT WINES: A WINNING FORMULA FOR EVERYONE

The fact is that temperatures are rising and consumer needs are shifting. There is a decline in overall consumption—including daily home consumption—alongside an increase in social drinking away from home. Coupled with this is a growing focus on health and waistlines.

Ultimately, high-quality wines—firmly rooted in tradition and their region of origin, yet fresher, more drinkable, and lower in alcohol—are emerging as the winning solution. They offer an alternative for health-conscious consumers who want to avoid weight gain but previously looked to “no/low-alcohol” drinks—products often made from low-quality wine that undergoes dealcoholizing and heavy processing.

Consortia such as Pinot Grigio DOC Delle Venezie, Prosecco DOC, Garda, and Orvieto are leading the move toward naturally lower-alcohol wines, emphasizing freshness, high quality, and sustainable production. After all, wellness and moderation are powerful trends among consumers.

ORVIETO AIMS FOR 10 %NATURAL ALCOHOL, WHILE GARDA TARGETS 9%.

ROSA DI TETTO 2024 MARKS A RETURN TO THE OLDEST TUSCAN TRADITION OF ROSE’ WINE, THAT OF THE COLOURFUL WINES THAT FARMERS MADE IN SECRET

Rosé wines intense enough to accompany the entire meal and soft enough to be drunk cold.

Fattoria del Colle has been producing rosé wines for over forty years but in 2024, for the first time, part of the grapes for this wine come from the Montalcino vineyards of Casato Prime Donne. A circumstance that gives greater structure to the Rosa di Tetto.

ROSA DI TETTO IGT TOSCANA

The choice to produce a more structured rosé stems from the international success of this type and the demand for rosés with greater personality and aging capacity. A change that coincided with a return to the origins, inspired by the “acquati” produced by Tuscan farmers since time immemorial. Those of a century ago were fragrant but poor-quality rosés obtained by stealing a part of the must at the beginning of fermentation or by refermenting the marc. They were therefore poor wines.

Today there is a precise desire to seek out wines of high quality and great elegance. The Rosa di Tetto 2024 belongs to this typology to which it combines great oenology with a touch of Tuscan tradition already evident in the onion skin colour. This characteristic derives from a prolonged contact between the skins and the must which transfers the typical notes of Sangiovese and a more intense colour to the wine.…

This is a semi-serious recipe, which is very quick and based on buffalo speck from Gaetano Mastrantoni. Very well matched with the rosé IGT Rosa di tetto from Fattoria del Colle

The presence of grappa and buffalo speck renews a recipe already well known and appreciated. Very apt for those who are intolerant to milk because the intense taste of the buffalo speck enables one not to use grated cheese.

INGREDIENTS for 4 people

300 g of short pasta –such as penne or sedanini – , 20 small very ripe pomodori ciliegini , 150 g of buffalo speck, a small glass of Grappa di Chianti, 3 tablespoons of non-dairy cream, some butter, extra virgin olive oil, a garlic clove, salt and pepper

PREPARATION

Lightly fry the garlic in the extra virgin olive oil, put in the tomatoes which have been washed and diced and cook. Add salt and pepper. In the meantime cut the speck into small pieces and cook it in the butter. As soon as it is nearly crisp add the grappa and then add all to the tomatoes, and the non-dairy cream. Dress the pasta cooked “al dente” and serve while hot.

BEST WINE TO MATCH IS THE ROSE’ FROM FATTORIA DEL COLLE

At Fattoria del Colle the production of rosé began more than 30 years ago with the name “Aqua di Tetto”. When Donatella Cinelli Colombini received from her father the farm she decided to change the name because the previous one led to imagine a red wine that had been watered down.…

Cod is really apt for the lent period, even though once it was considered a poor man’s fish, while today it is a delicacy for the rich; this is a traditional Tuscan recipe

By Donatella Cinelli Colombini

In the Tuscan countryside baccalà was, together with anchovies, the only available fish and king of the days of lent

A CRAFTY TRICK

The housewives had learnt to cook it with great sauces, even though in the dish one got only a small piece of cod, although with bread dipped in this very tasty sauce one was able to ease the hunger.

Nobody remembers the reason for this recipe’s strange name even though monks touring the countryside asking for charity were a frequent vision in farmhouses and around the villages, so we can think that maybe there were some dishes created especially to honour them. At Fattoria del Colle there is even an apartment called “monache” (nuns) which used to be used to welcome these religious people on their way, it is in a position that allowed the guests to go outside without having to pass through the kitchens and the pantry. It was not unusual in fact there to be monks who were imposters, who tried to get into pantries and cupboards to thieve food, and so it was necessary to take precautions.

Accompany the baccalà alla fratina with a structured rosé such as IGT

“Rosa di tetto” from Fattoria del Colle

INGREDIENTS FOR THE BACCALA’ ALLA FRATINA

½ kg of cod, 3 spoonfuls of flour , half a glass extra virgin olive oil, 3 onions, ½ glass of white wine, ½ kg of peeled tomatoes with their juice, hot peperoncino, salt

A SIMPLE PREPARATION

Choose a nice whole piece of stockfish with the fishbone; leave it to soak a whole day changing the water often.…
