Never come between a man and his wife, not even for some passito

Donatella Cinelli Colombini does not like sweet wines, her heart beats faster for red wines apt for long ageing.
On the other hand her husband Carlo is fascinated by them. So Carlo, helped by Barbara Magnani the cellar master, who just like hem adores these amber nectars, is able to produce small but delicious selections of Passito regardless his wife’s protest.
The Traminer grapes from the small vineyard above the Chapel at Fattoria del Colle received assiduous attention from the two accomplices. The had great care of the crates where the drying out of the grapes took place, as if they were baby’s in their cots. Putting the crates in the sun in the morning and moving them in the afternoons, putting them away so as to preserve the humidity in the evening and the races to save them from rain.
In other words a real passion, with the desire to reach excellence that has been rewarded with an extraordinary result. 300 bottles of excellent dessert wine that has also been praised by Valérie Lavigne the consultant wine maker.
The 2011 harvest had scarce grapes and was greatly forward in its timing. When the Traminer grapes were picked they were perfectly sound and ripe.

Vintage characteristics: very hot July interrupted by rainfalls at the end of the month. The great heat caused an early colouring of the grapes and lignification of the shoots followed by an early ripening, so the harvest took place a lot sooner than usual.
Grape variety: Aromatic Traminer
Grape harvest: from August 28th to 29th, with manual harvest and careful choosing of the grapes. The rapes reached the cellar in 5 kg crates.
Drying out of the grapes: took place in the sun for a whole month.
Vinification: after the de-stemming, the grapes were pressed and transferred to the stainless steel vats, the temperature was maintained at about 18/20°C and selected yeasts were inoculated. During this period some short open air pumping overs took place so as to favour the fermentation processes.

Colour: golden yellow
Aroma: aromatic, notes of honey and ripe fruit.
Taste: full, sweet with hints of flowers, honey and yellow fruit.
Analysis: alcohol 11 % Vol
Match with: this is a wine apt for meditation and is perfectly matched with blue-cheeses, dry biscuits and dark chocolate.
Way of serving: 8°/10°C, use small crystal tulip shaped wine goblets.
Home aging: to be consumed within 2018. Keep the bottles lying down in a dark and cool place.
