The Superiore denomination indicates a Chianti with superior quality characteristics and aging ability. It is produced only in vineyards that have a greater vocation and lower production. This Chianti Superiore is certified BIO-organic and is a “farmhouse” wine as we call it in Tuscany, that is, it is a “family wine” born in the property’s vineyards, and then vinified, matured and bottled by the same winery.
Indicazione Geografica Tipica, on the other hand, is one of the five denominations present in Italy, namely DOP, DOC, DOCG and IGP, used to indicate the best table wines present on the community market, which respond to certain characteristics such as production area and the use of traditional techniques.

Chianti is a gastronomic wine, that is, it was created to accompany food. It is very versatile and goes well with typical Italian dishes based on pasta, meat, cheese or cured meats but also fusion cuisines or those of other cultures such as non-spicy Chinese dishes or Indian ones

This wine is very versatile and even multi-ethnic, it goes well with classic Tuscan foods such as Florentine or mature pecorino and cured meats but also intensely flavoured dishes from oriental cultures
2021 AN UNUSUAL PUZZLE HARVEST
They called the 2021 harvest this way because the vineyards were divided into small areas based on the ripeness of the grapes. The harvest calendar was built according to the maturation of each portion, ensuring that the small fermentation vats in the cellar were full every evening. A method that entailed greater costs, more staff and more time due to the constant movement from one vineyard to another. The result, however, is a greater respect for the fruit, which is always picked at the precise moment of its maximum potential and an increase in the quality of the wines.
2019 THE DREAM HARVEST 2019
The super Sangiovese harvest, the year in which the bunches and grapes of the king of Tuscan varieties looked like those of Cabernet. An abundant, perfect grape that was harvested by hand and then vinified in small vats where the must quickly took on a very intense colour. Even the bunches of Sagrantino and Merlot, which make up the Drago and the 8 Colombe blend, were of the highest quality. Each variety was vinified separately but, to exploit the richness of the 2019 grapes, they all underwent a very long post-fermentation maceration.

IL DRAGO E LE 8 COLOMBE: A WINE DEDICATED TO MEN IN THE WOMEN’S CELLAR
The wineries belonging to Donatella Cinelli Colombini, Casato Prime Donne in Montalcino and Fattoria del Colle, where this wine is born, are the first in Italy with an entirely female staff. The Il Drago e le 8 Colombe is dedicated to the only male present: Carlo Gardini, Donatella’s husband and creator of small, highly awarded series of Passito and Vin Santo. He is the dragon mentioned in the name of the wine and surrounded by 8 doves: the consultant Valerie Lavigne, the oenologists Barbara, Giada and the cellar staff, the tourist reception and sales staff. An oenological gynaeceum that is constantly growing in number.
DESCRIPTIVE SHEET OF CHIANTI SUPERIORE 2021
GRAPE VARIETY: Sangiovese with small additions of grapes authorized in Tuscany
HARVEST: From 5-6 October Manual harvest with selection of the bunches in the vineyard and the grapes on the sorting table in the cellar.
VINIFICATION: 15 days in thermoregulated steel vats. After alcoholic fermentation, the wine remained macerated with the grape skins for 15 days.
QUANTITY: 16,600
DESCRIPTIVE SHEET OF IL DRAGO E LE 8 COLOMBE 2019
GRAPES: Sangiovese 60%, Merlot 20%, Sagrantino 20%
HARVEST: 4-7 October. The Sangiovese grapes were picked first and the Sagrantino grapes last. The harvest was done by hand with selection of the bunches in the vineyard and the grapes in the cellar.
VINIFICATION: in thermoregulated steel vats, the maceration in contact with the skins was longer than usual.
AGEING: 18 months in large 5-7 hl French oak barrels and tonneaux.
QUANTITY PRODUCED: 17,800 bottles.
