Evo oil will be scarce this year too. By now we have become accustomed to harvesting few olives but we continue to love the trees that characterize our landscape. Trequanda, where the Fattoria del Colle is located, has been included in the register of “Rural landscapes of historical interest” thanks to the olive groves that cover its hills and which, since the Renaissance, have given rise to the production of terracotta jars in the hamlet of Petroio

 

 

 

 

 

 

 

DESCRIPTION OF THE 2023 EXTRA VIRGIN OLIVE OIL

In 2023, the fruit setting of the olives took place late due to the rain. The hot and dry periods that followed also reduced production, causing some of the olives to fall.

However, precisely because of the climate, the “yield”, i.e. the percentage of oil obtained from each quintal of olives, is higher than in past years.

With the help of Sergio Pinarello, member of AICO and great enthusiast of local food and wine, we try to trace the organoleptic profile of the 2023 extra virgin olive oil from Fattoria del Colle and in this part of  Tuscany. It is a good EVO oil: on the nose it has aromas of cut grass. It is balanced in the mouth but is sweeter and with less fruit than previous years due to a low presence of bitterness (2.5-3 points) and a spiciness of up to 4 points.

At Fattoria del Colle we have 6 hectares of olive groves of the correggiolo (frantoio) and moraiolo varieties planted in 1986 after the cold wave that killed the Tuscan olive groves. The only survivors of that terrible winter are the olive trees along the roads that almost form an access avenue to the farm. Every year we produce 10-15 quintals of extra virgin olive oil which is packaged as a blend of two cultivars in the DOP Terre di Siena type, and in purity as a monocultivar Moraiolo and Correggiolo. There is also a special package for children decorated with the blue elves created by the painter Alessandro Grazi.

Our extra virgin olive oil is on sale in the two wineries Fattoria del Colle and Casato Prime Donne, in the three Toscana Lovers shops in Siena, Bagno Vignoni and Cortona, and online.

All our oil is ORGANIC. To tell the truth, in this area of ​​Tuscany producing organic EVO oil is easy because nature does it alone. In Trequanda the oil fly arrives very rarely thanks to the altitude of 400 meters above the sea level and the excellent ventilation. The sea sand soil is particularly suitable for olive trees. The harvest is done by hand using small electric rakes that drop the olives into large nets spread under the plants. muzio which is just a few kilometres from Fattoria del Colle. Here is Paolo Bindi, a competent and passionate oil mill operator who works with a Pieralisi system.

Subsequently the oil is stored in the dark, under nitrogen and at a controlled temperature in the farm’s small olive oil room.

 

 

 

 

 

 

 

HOW TO STORE EXTRA VIRGIN OIL

The killer of oil is light. For this reason it is better to keep oil bottles in the cupboard and not exposed to the sun. For long storage it is good to remember that the oil freezes at 12°C and therefore it is necessary to avoid keeping it in a location where it is cold in winter and hot in summer, which causes the expansion of the liquid and overflowing the bottles. The oil absorbs odours, a pleasant characteristic if it is stored next to a white truffle but very unpleasant if the scent is that of sewer. Poor storage destroys much of the health-promoting properties of extra virgin olive oil, such as oleic acid, which is a monounsaturated fat capable of regulating cholesterol levels. EVO reduces the likelihood of heart attack, diabetes, cancer and aging.

You need coloured glasses and a green apple to remove the flavours between one tasting and another.

Use your senses to recognize the best oil.

Visual observation is very useful for understanding fraud: olive oil rotates slowly in the glass while if it is mixed with sunflower seed oil it is much more fluid and rotates faster. The colour on the other hand – green when young, yellow after a few months – is of little importance because it can be easily counterfeited.

The sense of smell is more truthful. The oil must be heated (28°C) by placing one hand on the cup and the other to close the glass in order to capture all the aromas. The good ones recall artichoke and cut grass (green fruity) or sweet fruit (ripe fruity).

Tasting should be done before and not after meals. You must also abstain from smoking before tasting the oil, just as it is better to avoid perfumes on the body or in the environment.

The tasting technique requires you to put a sip of oil in your mouth, chew it and then suck it in between your teeth, continuing for about half a minute. The perceptions will be progressively more intense before swallowing or spitting out the oil and will continue afterwards. We will taste bitter, spicy, dry, astringent… The bitter-spicy taste is an advantage and indicates a high presence of polyphenols (antioxidant elixir of long youth). But olfactory harmony is the greatest quality that must be sought.
