Il Drago e le 8 Colombe 2020 preview is a “super Tuscan” that is, an IGT Toscana wine that does not belong to any denomination but was born following the creativity of Donatella Cinelli Colombini’s winemakers. It is a blend of wines from three different varieties, grown at Fattoria del Colle, and is dedicated to the male component of her family which yesterday consisted of her husband Carlo Gardini and today is represented by her grandson Lorenzo.

NEW PROJECT
These two vintages are part of the “Vineyard first” project where we make every effort to pick the grapes as soon as they are ready and we develop a system to choose the day of harvest based on tasting the grapes and the day on which the quantity of total polyphenols begins to decrease.
THESE TWO WINES ON THE TABLE
Each sip tells a story of tradition, excellence and wine passion. They are two gastronomic wines, that is, they are born to accompany food. They are very versatile and go well with typical Italian dishes based on pasta, meat, cheese or cold cuts but also fusion cuisines or cuisines from other cultures such as non-spicy Chinese or Indian preparations.

THE 2020 VINTAGE
The grapes, perfectly ripe, healthy, with well-lignified seeds and the typical crunchiness of the best Sangiovese. Even better analytical data compared to 2019: smaller sized grapes, higher extractable polyphenols and a good acid content. Very colourful and fragrant musts.
2022 HARVEST
This harvest was poor. Few very good and healthy grapes due to the 2021 frost which extended its effects into the following year and above all due to the seven months of drought which put the vines to the test and the winemakers forced to continuously hoe the soil. 2022 was a very hot year and budding occurred early, also leading to an early harvest compared to the normal calendar
CURIOSITIES
In 2020, the year of Covid, there was a spring frost (18-23 March) which drastically reduced the grapes in the vineyards. After a mild and arid winter, June was very rainy while from mid-July to the end of August the heat was never interrupted by storms. The good weather continued in September until the harvest when the disturbances began to arrive.
2022 was hot and arid. The summer was interrupted by a huge disturbance on August 18th which helped the vines in the ripening phase. For this reason, at the time of harvest the analytical parameters of the grapes were perfect
