All Brunellos are able to last many years in the bottle, but Brunello Riserva is one of the greatest red wines in the world created for very long cellaring.

only in the best years and choosing by hand, one by one, the best bunches of Sangiovese grapes. A slow and careful way of working that allows only perfect grapes of the same level of ripeness to be sent to the cellar.

Before the harvest, the vineyards are divided into small parcels based on the tasting of the grapes. The area with the greatest qualitative potential is destined for the production of Brunello Riserva. The selection is made by tasting the grapes, just as was done a century ago, the laboratory analysis confirms the decision. Generally, the best grapes come from the Ardita vineyard, planted and cultivated at the highest point of the vineyards around the property.

BRUNELLO RISERVA AT THE TABLE

These are important wines for important meat dishes and mature cheeses. They require foods with an intense flavour and low fat, pickled mock thrushes would be perfect!

RECIPE FOR “FAKE THRUSHES” IN SALMI’ (TORDI FINTI)

For 4 people

Easy.  Necessary time one hour and a quarter approx.

INGREDIENTS

4 slices of beef, approximately 150 g each, an egg, juniper berries, sage leaves, a few black olives.

700g of ripe tomatoes, 6 slices of Tuscan prosciutto, breadcrumbs, garlic, salt and black pepper, extra virgin olive oil.

PREPARATION OF FAKE THRUSHES

Beat the egg, dip the slices of meat in it after cutting them in half. Coat the meat in breadcrumbs and top each with a slice of ham, a sage leaf, a juniper berry, salt and pepper. Roll up the meat and close it with a toothpick. Place it in a pan with a little oil and cook in the oven at a moderate temperature for about 45 minutes. Fry the garlic in oil and as soon as it turns golden, remove it and replace it with tomatoes roughly chopped into pieces. Add salt and continue cooking by lowering the heat until you obtain a compact cream. Add the olives, a few juniper berries and the fake thrushes, allowing them to incorporate the sauce for ten minutes. Serve hot.

CURIOSITIES ABOUT THE THREE WINES

 

RISERVA 2018 IN THE VINEYARD

2018 follows a year of extreme heat and therefore everyone welcomed the insistent spring rains with joy. In the summer the storms continued, making the winemakers work a lot and worrying the cellar workers because the bunches, and especially the grapes, were too big. Furthermore, a disturbance of Nordic origin at the end of August had stiffened the grapes. In September the positive turning point: sunny days made the grapes return to their optimal size, progressively softening the skins. To favour the action of the sun, the vines were stripped. The Sangiovese grapes for the 2018 Brunello reserve were harvested on October 1st.

RISERVA 2016 IN THE GLASS

COLOUR: bright ruby ​​red. The structure that guarantees the longevity of the wine is evident from the slowness with which it swirls in the glass.

AROMA: Complex, fine. The memory of small ripe red fruits, cedar, walnuts is accompanied by notes of coffee, chocolate and tobacco

TASTE: Extremely, harmonious, concentrated and long. An elegance that satisfies with silky tannins and remains long after the sip.

RISERVA 2015 IN THE CELLAR

HARVEST: From 21st to 30th September. Healthy grapes, with small bunches and berries. Very homogeneous maturation with well lignified seeds and soft, water-soluble skins. Manual harvesting with selection of

bunches in the vineyard and cleaning the grapes on the cellar sorting table

VINIFICATION: alcoholic fermentation for 15 days in small truncated conical steel and bare concrete vats. All equipped with thermoregulation and fuller. Selected indigenous yeasts. The maceration in contact with the grape skins lasted for another 15 days
