An IGT Supertuscan BIO (organic) with characteristics of excellence and exclusivity. Sanchimento 2022 comes from the Traminer grapes from Fattoria del Colle, blend of 2 fermentations traditional and orange.

It is a small series of only 1050 bottles produced in an excellent and particularly scarce harvest of grapes. The 2022 vintage was in fact hot and dry. The vineyards at Fattoria del Colle enjoyed the altitude (404 meters above sea level) and light rainfall which mitigated water stress. However, at the time of harvest, the number and size of the bunches was very small.
SANCHIMENTO ALMOST AN ORANGE SUPERTUSCAN WINE
Sanchimento IGT Tuscany 2022 is a BIO (organic) wine in which nature and creativity are combined with amazing results. It contains Traminer grapes, a Nordic vine not widespread in Tuscany which, at Fattoria del Colle, receives assiduous care in the vineyard, in the manual harvest and in the cellar.
Here the three winery oenologists have created a small masterpiece. After three years of experimentation, they have developed a very particular vinification. Part of the grapes were fermented with the orange system (in the presence of skins and without the addition of yeasts) in an orcio (jar) from Impruneta, the place from which the most famous terracotta’s in Tuscany come from. The wine remained closed in this container until almost bottling time when it was combined with the Sanchimento produced with the traditional method. The result of this blend is a small work of art that does honour to Barbara, Sabrina and Giada, the 3 winemakers of Donatella Cinelli Colombini‘s cellars, the first in Italy with an entirely female staff.
The wine is complex, intense and at the same time fresh to the point of being able to accompany the entire meal.
SAN CLEMENTE AKA SANCHIMENTO
The vineyard from which the Sanchimento grapes come was planted in 1989 around the chapel of San Clemente. This Saint was Pope from 88 to 97 and died in 99 martyred in Sevastopol being thrown into the sea with an anchor tied around his neck.
In the Sienese vernacular, a language where many terms are still medieval, the name of the saint becomes Chimento as in the XIII century.
PRODUCTION CHARACTERISTICS OF THE 2022 SANCHIMENTO
TYPE: Dry white.
PRODUCTION AREA: Tuscany, Trequanda, Fattoria del Colle.
CHARACTERISTICS OF THE VINTAGE: Arid winter, rainy spring. Very cold period in early April. Hot and very dry summer with only a few showers.
GRAPE VARIETY: Traminer.
HARVEST: August 22nd. Manual harvest, the bunches were placed in crates and refrigerated before vinification.
VINIFICATION: A small part of the grapes was vinified with the skins and natural yeasts according to the orange wine technique for 12 days in a terracotta jar from Impruneta. The wine remained here to mature without ai and without skins for about 4 months.
The rest of the grapes were pressed and the must obtained was cooled to 4 ° C for the static decantation of the lees. After 12 hours the clear must was decanted and allowed to heat up to 14 ° C when yeasts were added. Fermentation lasted over two weeks at a temperature of 16-18 ° C. Before bottling, the two types of wine were mixed and the “orange” part was about 25%.

ANALYSIS: Alcool 13,5 %Vol.
ORGANOLEPTIC DESCRIPTION
COLOUR: bright golden yellow.
BOUQUET: Complex, quite elegant. Mineral suggestions typical of the variety, together with floral hints, and references to yellow fruits, even exotic ones, and citrus nuances.
TASTE: an excellent balance between freshness and gustatory intensity. The flavour remains pleasantly in the mouth for a long time.
SANCHIMENTO AT THE TABLE
FOOD PAIRING: Very versatile, it beautifully accompanies savoury snacks and meals based on delicate dishes such as vegetable soups, fish, shellfish, white meats, vegetables and fresh cheeses.
TABLE SERVICE: serve cool (10-12 ° C), in tulip-shaped white crystal goblets.
CELLARING: to be consumed within three years from the harvest. Lay the bottles down in a dark and cold place.
