TO KNOW MORE ABOUT SANCHIMENTO IGT TOSCANA BIANCO 2020
This is an ORGANIC white Supertuscan from a 5-star harvest.
To produce it, the grapes from the Traminer vineyard were used; this is located behind the Chapel at Fattoria del Colle. After the manual harvest, the wine maker Barbara Magnani, together with the two junior wine makers Sabrina and Giada, made two different vinifications. The first classic and the second orange style, fermenting the grapes with the skins and with indigenous yeasts.
Two very different wines came out of it that were united before bottling. The result is a wine of great character and finesse, less aromatic but more complex on the nose than those we were used to. More agile, wide and structured in the mouth. A non-trivial wine that shows the courage to experiment and interpreting the natural characteristics of Traminer grapes grown in Tuscany
FOOD PAIRING: Perfect even between meals as an aperitif or to be matched with snacks. Apt for light meals and plenty of delicate tasting dishes with fish, meat, vegetables and cheese.
WAY OF SERVING: serve cool (10-12°C), in tulip-shaped clear crystal glassware.

Doc Orcia wine region was born on February 14, 2000 on the high hills that are located in the south of Tuscany between the Brunello di Montalcino and Nobile di Montepulciano wine territories.
She was born with two older and more famous sisters. But the young Doc Orcia, like the Cinderella in the fairy tale, decides to challenge the sisters and also go to the prince’s ball, and in the end, he marries her.
In reality the Cenerentola wine has managed to obtain scores of 90, 92, 93/100 from the international wine press and to conquer the hearts of very competent wine lovers from all over the world, thanks to its unique character derives from the use of two native varieties: Sangiovese (65%) and Foglia Tonda (35%), the latter is very rare.
This dry red wine produced in Tuscany, in the vineyards at Fattoria del Colle in Trequanda was harvested on September 13th and 14th. The harvest was manual with very careful selection of the bunches. The grapes were harvested during two successive passages that allowed differentiating the best quality.
The vinification took place in 80-100 hl steel vats equipped with thermoregulation for a duration of 15/25 days. Finally, the wine matured in wood for 12 months in 5 hl tonneaux made out of French oak and in small barrels.
FOOD PAIRING: wine apt for important meat dishes and for aged cheeses. Excellent also simply accompanied by a snack with crackers or bread stick and cold cuts. Vinegar, raw onion and garlic, artichokes and asparagus are to be avoided.

This wine obtained 94/100 from Robert Parker Wine Advocate. Made from aromatic Traminer grapes grown at Fattoria del Colle it is the wine created by Donatella Cinelli Colombini’s husband, Carlo Gardini together with Barbara Magnani the wine maker. Only 130 litres produced with manual care in the vineyard and in the cellar, that precisely because of the craftsmanship in its execution (the crates in which the grapes wither are moved by hand several times a day) reaches extraordinary levels of quality and distinctive personality
FOOD PAIRING: meditation wine that goes perfectly with aged and blue cheeses, dry sweet biscuits especially if made with almonds.
HOW TO SERVE: 8°/10°C, depending if use during a meal or not. Serve it in small glassware but also in very full glasses in clear crystal with a tapered top.
CELLARING TIME: to be used within 2022. Lay the bottles down in a dark and cool place.

Rosé is the trendy wine in the new millennium. This is why the most demanding consumers are asking for wines that are always rich in personality, finesse and quality. This prompted Donatella Cinelli Colombini and her three wine makers to create, with the Sangiovese grapes from the BIO (organic) vineyards at Fattoria del Colle, a rosé in which the scent of violet mixes with that of apple and cherries. A more complex production compared to that produced previously, more important and structured, where the Sangiovese imprint was well perceptible. A wine to drink “throughout the meal” and even age.
FOOD PAIRING: for the whole meal, for antipasto and for brunches. This is a perfect match for delicate dishes like soups, fish, eggs, white meats and vegetables, fresh cheeses that are not spicy.
HOW TO SERVE: 10-12°C, use tulip shaped white crystal glassware.
CELLARING: to be consumed within 4 years from the harvest. Lay the bottles down in a dark and cool place.

“IO sono Donatella”
is the most important and prestigious wine from Donatella Cinelli Colombini’s wineries.
This is a small selection of just 800 bottles made only in the best vintages and with the best Brunello di Montalcino. After two years maturing in French oak barrels, the wine spends at least 6 months in a bare concrete egg to increase its softness. It is packaged in bottles with a special external processing that reflects the light and has in the centre a ring with the Donatella Cinelli Colombini’s coat of arms in gold.
The Brunello IOsonoDonatella was created for the first time with the 2010 harvest and celebrates the Donatella Cinelli Colombini’s dream come true: the dream of building a winery capable of achieving international success and a wine of superior, long-lasting and fulfilling quality.
FOOD PAIRING: important meat dishes, aged cheeses.
HOW TO SERVE: at room temperature (18 °C). Wide, clear bowl-shaped crystal glassware. It is best to open at least one hour previous to serving, possibly oxygenating it in a decanter.
CELLARING: 20-30 years and more. Lay the bottles down in a dark and cool place. Donatella Cinelli Colombini’s winery offers the certified cork substitution after 20 years from the year of bottling.
TO KNOW MORE ABOUT VIN SANTO DEL CHIANTI 2008
In previous years this wine has obtained up to 93/100 from Robert Parker Wine Advocate and the gold medal at Merano Wine Festival. Vin Santo is the most traditional dessert wine in Tuscany. It is produced in the attic of the Villa at Fattoria del Colle. Here are the small barrels where it matures for over 10 years.
ALCOHOL CONTENT: 15 %vol.
FOOD PAIRING: this wine can be served also with antipasti made with liver. Perfectly matched with dry biscuits especially if made with almonds, it is perfect to accompany the specialties from the Sienese tradition.
HOW TO SERVE: best slightly chilled or at room temperature 18 °C. Use two versions of clear crystal glassware: the classic small tulip shaped ones or ones with wide bowls that allow for a better appreciation of the aroma.
CELLARING: wine that can be stored for a very long time, it can challenge the centuries. Keep the bottles in a dark and cool place (13-15°C).
