This is practically a full immersion in wine! Donatella Cinelli Colombini has asked her new chef at Fattoria del Colle, Roberta Archetti, to create dishes in perfect harmony with three DOCG wines so as to offer guests a new an interesting experience in her winery.

Harmonious tastes in a harmonious ambiance with new very Tuscan furnishings and a panorama which resembles a nativity scene with the vineyards at a stones through and the hamlet of Trequanda just in the background.

Chef Roberta Archetti comes from Brescia, and has chosen Tuscany and cooking as the pillars of her life, in her curriculum an excellent point comes from the period spent at the Dal Pescatore in Canneto sull’ Oglio  with the myth Nadia Santini.

This minute lady, very serious but creative, goes the job of finding new harmonies starting from the local tradition. And she has managed it! Dishes that are apparently old but that have been renovated in their cooking procedure and in the ingredients : pinci alle briciole con gotino di Cinta senese su crema di lenticchie di Castelluccio with  Chianti Superiore DOCG 2011. The matching wines are served by the glass by Florjan Canaj who also describes them. Florjan too is a new entry in Donatella Cinelli Colombini’s team: just 30 years of age, contagiously funny but also he has a great experience in 5 star hotels.

For those who wish to continue their “wine experience” there is a guided tour of the winery where we produce the Chianti and Doc Orcia wines under the 16th century villa. Where maybe there is a tasting of the wonderful Cenerentola 2010. Or something more sporty, where the lunch calories can be knocked off, with a trekking trail through the vineyards; 2,5 km up and down the hills following the arrows and the explanations which teach all about the characteristics of each grape variety. Breathtaking views in the most beautiful countryside in the world, and a small old world where one can regenerate in a harmonious and serene manner.
