💖 A story behind a label
The label for Il Drago e le 8 Colombe features a dragon surrounded by eight doves. Donatella Cinelli Colombini’s wineries—Casato Prime Donne in Montalcino and Fattoria del Colle in Trequanda—are the first in Italy to employ an entirely female team. For this reason, Donatella felt the need to dedicate a wine to the male members of her family, which yesterday consisted of her husband Carlo Gardini and today is represented by her grandson Lorenzo. The 8 Colombe are the winemakers, cellar staff, and those responsible for tourist reception and sales. This ever-growing team will soon force Donatella to change the name of the wine and add a few doves to the label.

For Il Drago e le 8 Colombe, Sangiovese provides elegance, Merlot softness, and Sagrantino, an Umbrian grape, provides structure. The result is a wine capable of aging for a long time and offering emotion and pleasure to those who drink it. It pairs well with Tuscan dishes such as Florentine steak or aged pecorino cheese, cured meats, and even Indian and Chinese dishes.
The Brunello Riserva, on the other hand, is a wine suited to rich meat dishes, aged cheeses, and game.

DESCRIPTION OF THE 2019 BRUNELLO RISERVA
VINEYARD: Montalcino, Casato Prime Donne
CLIMATE: Mild and dry winter. A very rainy spring delayed the growing season and disturbed flowering. This contributed to the small size of the 2019 bunches. In summer, rain and sunshine alternated, and the heat was moderate. September was sunny with cold nights and two low-altitude rainfall events, September 22-23 and October 2.
GRAPE VARIETY: 100% ORGANIC Sangiovese
HARVEST: October 3, the grapes were hand-picked, selecting the bunches in the vineyard and the berries in the cellar on the sorting table.
VINIFICATION: In truncated cone-shaped concrete vats with open caps, punch-downs, and automatic temperature control. Fermentation temperatures were kept spontaneously low. Maceration on the skins was extended compared to usual, delaying racking by 10 days.
AGED IN WOOD: In 15-20 hl barrels and 5-7 hl French oak tonneaux, produced by small artisan workshops using wood seasoned for over two years.
QUANITY PRODUCED: 10,000 bottles
TECHNICAL DATA SHEET FOR DRAGON AND THE 8 COLOMBE IGT
TYPE: ORGANIC dry red
PRODUCTION AREA: Tuscany, Trequanda, Fattoria del Colle, 400 m above sea level, with Neo-Quaternary soils characterized by clay and sandstone.
CLASSIFICATION: IGT Toscana Rosso
VINTAGE CHARACTERISTICS: Mild and dry winter, with frost on the nights between March 18th and 23rd. Very rainy June. Scorching heat from mid-July to September, with a huge thunderstorm in mid-August. Excellent temperature ranges between night and day.
GRAPE VARIETY: Sangiovese, Merlot, Sagrantino
HARVEST: September 14th and 15th for the Merlot. The Sangiovese grapes were picked in late September, immediately followed by the Sagrantino grapes. The harvest was done by hand, with the bunches selected in the vineyard and the berries sorted on the floating table in the cellar.
VINIFICATION: In temperature-controlled steel vats, maceration on the skins in closed vats. The musts were very colorful and fragrant, characteristics that remained in the wine.
AGEING: 18 months in barrels

Colombino EVO Oil – Donatella Cinelli Colombini, Fattoria del Colle, Trequanda, Tuscany
Colombino Olive Oil is an organic extra virgin olive oil created especially for children, to introduce and encourage them to enjoy the healthiest product on earth, which will help them grow healthy and strong. This children’s oil is packaged in metal cans, a convenient, non-fragile format, and covered with a label full of GANGHERETTI, little monsters and elves who inhabit Fattoria del Colle, drawn by the painter Alessandro Grazi. The cans are small enough for children to handle on their own (250 ml and 500 ml) and have a space for everyone to write their name.
