A Supertuscan for those who love Tuscan cuisine but also something more multiethnic, Il Drago e le 8 Colombe is appreciated by the young and by those who love small masterpiece productions

2015 is a 5 star harvest, 2015 is a lucky year because the vineyards remained miraculously unharmed while all around all sort of things were going wrong: in Torrita hailstones as large as tangerines, water bobs flooding the nearby Buonconvento. But in the vineyards small perfect clusters were ripening, more beautiful than we had seen for a long time.


The Il Drago e le 8 Colombe symbolizes the 8 women who work in the winery at Fattoria del Colle –together with Casato Prime Donne in  Montalcino these are the first in Italy with an all female staff- and the only man who can influence the productive choices : Carlo Gardini, husband to Donatella Cinelli Colombini the owner.


The Il Drago e le 8 Colombe is a Supertuscan, which means it does not belong to any DOC appellation but is a “masterpiece” wine, a small production  born for the creativity and wine making passion that’s has enabled Donatella Cinelli Colombini to experiment in Trequanda with Sagrantino, variety from the nearby Umbria.

The Sangiovese, Merlot, and Sagrantino grapes used to produce this wine are born in Fattoria del Colle. They are cultivated following the organic regime with great manual care. Harvesting is also done by hand, at different times: firs the Merlot, then the Sangiovese and the Sagrantino for last. Each variety is fermented alone and with some small differences, just like the barrel ageing which is done separately. Each wine in fact needs to be exalted in its specific traits: softness for the Merlot, elegance for the Sangiovese and power for the Sagrantino. Cantina-Fattoria-del-Colle-300x200In the barrel ageing area, under the villa at Colle, there are some large casks, 5 an 7 Hl tonneaux  from 5 different French coopers. Every wine receives a “made to measure” aging to increase the complexity of the final blend. The Il Drago e le 8 Colombe is a wine that satisfies those who want to drink it straight away but also those who want to open a bottle after decades.


Type: dry red.

Production area: Tuscany, Trequanda, Fattoria del Colle, 400 m above sea level on land originating from the early Quaternary period. limestone, and sandstone.

Classification: IGT Toscana Rosso.

Vintage characteristics: very mild and rainy winter , very rainy spring that disturbed the flowering and reduced the number of clusters. The vegetative cycle, that had begun earlier and with vigour, practically stopped during the very hot month of July. The veraison began around the 25th  and lasted more than two weeks. In august the weather was changeable while in September the sky was clear but the difference in temperatures between night and day increased. During the harvest the weather was good.

Grape type: Sangiovese 60%, Merlot 20%, Sagrantino 20%.

Grape harvest: The clusters were handpicked with a selection made in the vineyard, and the best grapes chosen in the cellar.

Vinification: in temperature controlled stainless steel vats.

Ageing: 18 months in Slavonian oak barrels and in 5-7hl  French oak tonneaux.

Quantity produced: 8,000 bottles.

Colour: intense and brilliant ruby red. This wine proves its robust structure through the slow movement of the wine in the glass.

Aroma:  net, complex, elegant  full of hints of ripe red fruits, exotic fruits and spices.

Taste: fine, full, harmonious, round, and long lasting. The tannin-acid structure is well balanced by the fruit and offers a persistent and pleasing sensation.

Matching dishes: extraordinarily versatile and multi ethnic, goes well with Chinese and Indian dishes as with the more traditional Tuscan roasts.

Way of serving: This is a wine for great occasions. Serve at room temperature (18-20°C) in clear crystal balloon shaped wine goblets.

Home ageing: apt for 25 years ageing and more. Keep the bottles lying down in a dark and cool place.
