Fattoria del Colle is lucky to be positioned in an area renown for centuries because of the quality of its extra virgin olive oil. It is an authentic “cru” of the Tuscan olive oil. This offer will be delivered to your door ready to be served and to transform every dish into something delicious and healthy.

The estate has only 6 hectars of olive grove from which we make the 3 types of oil that we are proposing: the cultivar Moraiolo, Correggiolo (frantoio) and blend with the Biologico (organic) certification and the DOP Terre di Siena stamp.

All of the extra virgin olive oil at Fattoria del Colle is produced according to the organic regime but the BIO (organic) certification and the DOP Toscana stamp are asked only for the blend because it is the larger slice of our production.  Of the two cultivar Moraiolo and Correggiolo we produce only 200 small 500 CL bottles. The rest of the 0,8 tons is on the other hand DOP Toscana certified BIO and is sold in 750 CL. bottles.

With respect to the mono-cultivar it has less character but more harmony. If you prepare a barbecue with excellent meats, try and pour a little over the chicken or beef and you will see that the tastes is extraordinarily richer.

 

HOW TO BEST USE THE EVO CORREGGIOLO OIL

The Correggiolo variety, with its aroma of freshly cut grass and artichokes, and its nearly spicy taste, transforms into a regal plate even a simple dish of cooked vegetables. It is ideal for a bruschetta, home baked bread, toasted, rubbed with garlic, a little salt and pepper and the new oil. The secret is to eat it still hot.

 

HOW TO BEST USE THE EVO MORAIOLO OIL

The extra virgin olive oil obtained from the Moraiolo cultivar has a more distinct aroma of olives and a more full-bodied taste. Try it on raw vegetables like in the Tuscan pinzimonio: carrots, celery, tomatoes, fennel, all to be “dipped” in a small bowl with oil, salt and pepper. A very healthy way to start a dinner with foodies who want to stay young.

 

QUALITY OF THE EVO OIL: 50% FROM THE MICROCLIMATE, 25% FROM THE CULTIVAR AND 25% FROM THE HARVESTING AND TRANSFORMATION

The olive grove microclimate is very important and it affects the quality of the oil by 50%, another 25% depends on the cultivar or rather the variety of the plants. The remaining 25% of the quality of the oil depends on how the olives have been picked and pressed.

Fattoria del Colle is in one of the best regions in Tuscany for the production of oil, and Tuscany has been known for centuries as the best region for extra virgin. The cultivar Moraiolo and Correggiolo (frantoio) are greatly esteemed.

The olive groves at Fattoria del Colle are in southern Tuscany on well ventilated hills at 400 m in altitude. Pesticides are never used on the plants and the defence form the oleic fly, which in this region is very rare, is done with traps hung on the trees.

The olives are picked by hand when they are still green and they get taken every day to the olive mill. They are cold pressed in the Sant’Angelo mill 10 km from Fattoria del Colle. This is where the young and very competent mill-master, Paolo Bindi, works. He uses at low temperatures a Pieralisi system.

Our extra virgin olive oil is stored in contains saturated with inert gas so as to avoid contact with the air. This way the oil maintains its aroma and it s health virtues.

 

THE HEALTH VIRTUES OF THE NEW FARM OLIVE OIL

New extra virgin olive oil that comes from the last harvest is very concentrated with vitamins and antioxidants (oleic triglyceride). It is very good for the cardiovascular system and reduces the risk of thrombosis, ictus, heart attacks, neoplasm. It helps fight cellular ageing. For this reason from Ancient Greek times to today’s modern cosmetics, it has always been used on the skin, especially on older, drier and more sensitive skins. Here it has an anti-wrinkle, revitalizing, bio-stimulating antioxidant and repairing effect.
