This Sanchimento is obtained with the first grapes picked by the “masked pickers” which means those wearing the anti-Covid masks!!

Everybody will remember the 2020 grape harvest at Fattoria del Colle for the difficulty in following the safety rules regardless of the heat, fatigue and not being able to breathe properly. But nobody was infected let’s hope it will be the only grape harvest under the Covid claws.

 

SANCHIMENTO A BIO SUPERTUSCAN

The Traminer grapes were handpicked; the clusters were cooled in an old IVECO refrigerated truck. It is an antique but we keep it to use just for the grape harvest.

After a first experimentation in 2019, the cellar master Barbara Magnani with the two junior wine makers Sabrina and Giada launched themselves into a very interesting chemistry between traditional vinification and orange wine.

Part of the grapes was in fact vinified with the skins and with autochthonous yeasts. The blend with the Sanchimento vinified traditionally took place before bottling. The result is a wine of great character and finesse, less aromatic than before but more complex on the nose. More agile, full and structured on the palate. A wine that is not ordinary that demonstrates courage in experimentation and interprets the natural characteristics of the Traminer grapes grown in Tuscany.

The small Sanchimento vineyard was planted in 1989 by Fausto Cinelli, Donatella Cinelli Colombini’s father. It surrounds the San Clemente chapel at Fattoria del Colle. Chimento is in fact the name that was used locally instead of Clemente in the tongue that then became Sienese vernacular.
IGT Toscana Sanchimento 2020 is consequently a BIO Supertuscan produced in a small series of 2000 bottles. An exclusive wine for wine lovers that will visit or stay at Fattoria del Colle in 2021.

My mother Francesca was born in Modena where her grandfather, Pio Colombini, eminent dermatologist, was rector at the University. A prestigious role, in the second oldest university in Italy (that Pio Colombini filled with self-celebratory plaques), in a small but cultured and rich city, where all the family lived very happily. To confirm these feelings my mother has hanging in her bedroom, a photograph of the building where she was born, but she remembers with pride that <<in our Montalcino home we got electricity way before in our house in Modena>>. From the period in Emilia still today lingers in our family an unbelievable love of homemade tortellini.

An only child my mother was brought up practically as if she were a man: she would go hunting and could drive tractors and trucks. Before and during the Second World War my grandfather Giovanni Colombini would allow her to take part in everything that happened. Most of her memories are found in the book Il vino fa le gambe belle (2005). A tale that also regards the metamorphosis of Montalcino, from being a small, florid, rural and warrior hamlet, to being a poor settlement because of the farmers abandoning the countryside and finally to becoming the city of Brunello.

My mother’s stay in Montalcino was interrupted after the war because of a long stay in Florence, a city she adores. Here went to the Istitut Français di Firenze, a secondary school where she became fluent in the language, and she still is today.  She lived in the  “Casa di Boccacio” where now Violante, my daughter, and her husband, Enrico live. This is where Stefano my brother and I grew up, before moving to Siena, event that coincided with the death of my Grandmother Giuliana, Giovanni Colombini’s adored wife.

It was during these years that my mother began to work at Fattoria dei Barbi going backwards and forwards every day with a white Cinquecento FIAT. The search for alternatives to sharecropping farming of the past was a challenge my mother and grandfather experienced together with effort, tenacity and creativity. He was an extrovert and had grown up among academics, he loved to be surrounded by intellectuals and had a more cultured and visionary approach. She is pragmatic and is gifted with excellent organizational abilities (she, I and my daughter Violante are all dyslexic, a disability that becomes a strong point in managers) was dedicated to the operational aspects. A situation that in some ways favoured me, because my mother would refuse social events loved by my grandfather, so it was me that often accompanied him. This gave me the opportunity to understand the change in consideration towards wine and the cultivation of the land, and it taught me how to plan using long-sightedness and practicality. I think I received my true training during those trips.
My mother Francesca and my grandfather Giovanni, together, created the foundations of the present day estate. They transformed the small activities, winery, dairy, cold cut production and restaurant into  today’s prototype of multifunctional farming that can free itself from the food industry and starts from the fields to reach the consumer’s tables. Practically 50 years before the European project Farm-Fork.
After the death of my grandfather Giovanni Colombini, in 1976, my mother guided Fattoria dei Barbi alone for more than 20 years giving the winery an international market and reputation. If my grandfather had had the right intuitions it was she who built the productive structures.

ITALIAN WINE EXPERTS WHO HAVE DIFFICULTY IN ESTABLISHING THEMSELVES BY REMAINING IN THEIR HOMELAND

It really seemed like a running joke, among the 418 Master of Wine there were wine experts from 32 nations but nobody from Italy. Practically a stamp of our wine provincialism manifested far too often: let us remember the embarrassing occasion of the tem contest for sommeliers on October 12th 2019 at the Castle of Chambord in France, where our team were last out of 27 nations taking part. Two times in a row this happened.

Our wine experts are technically very strong and when they go abroad they are like fireworks. Think of Matteo Montone, from Milan living in London who won the title of Best Young Sommelier in the World in 2019 and, last summer became part of the Court of Master Sommelier. In this association too there are 267 members from all over the world, only two are Italians, both work abroad though.
The most sensational case however is Paolo Basso who won the title of Best Sommelier in the World ASI in 2013 competing for Switzerland.
Gabriele Gorelli seems to defeat this cliché of provincial Italians in their homeland able to bloom only abroad. In fact Gabriele is a young DOCG born and bred among the Brunello vineyards, his grandfather had a small piece of land, and he has never changed is residency.

The rules are few and simple: wine glassware is positioned from right to left. The wine glass for the entree is the first on the right and the one for dessert is last on the left. Better to use glasses without a stem for water so as to make it easier to identify.

 

BEST USE A TUMBLER FOR WATER AND STEMMED GLASSWARE FOR ALL WINES

A while back the water glass was the largest but with the arrival of noticeably larger wine glasses it has been necessary to find a practical alternative so as to not occupy too much space on the table. Those used to the old etiquette, however, often pour water into the large wine glasses for red wines and then feel terribly embarrassed. The new wine glasses are in fact much more bulky than the “old style” ones but also much easier to wash. I can remember the nightmare of washing the etched and engraved crystal glassware around 50 years ago, that would chip at the slightest contact, and would cut the hands of those washing them like razors. They were so impractical to remain nearly always shut in cabinets and so they would get passed on from generation to generation, clutter that nobody knew what to do with.

ENOUGH OF THIS REVERENTIAL FEAR OF CRYSTAL GLASSES, THEY ARE INDISPENSABLE TO TASTE WINE

The prices of crystal wine glass have been reduced a lot and at present it is possible to buy “singing crystal” at less than four euro each glass. So now there is a much less reverential rapport towards crystal ware and laying the table has lost the magical charm, like a religious rite, it had long ago.
I like to put all the glasses on the table before my guests sit down but this forces me to limit it to four-five glasses per person so we taste only four or five wines. This is not a bad thing, meals with endless wine tastings, like long ago, and are considered inappropriate in the health logic of the new millennium. To avoid abuse and increasing the tastings one should use a wine spittoon but these must absolutely be avoided at the table.

CENERENTOLA DOC ORCIA, A WINE THAT RESEMBLES A FAIRYTALE LOVE STORY

A story similar to that of Cinderella and that is the reason her name was given to the Orcia Doc wine produced at Fattoria del Colle by Donatella Cinelli Colombini. The finale is the same too: the Cenerentola wine has now surpassed the magical line of the 90/100 ratings by great international by critics (for the vintage  2016, it received 93 from Wine Spectator, 91 from Wine Advocate/Robert Parker, and 93 from James Suckling) and now has a small crown on the label like a true princess. The production is still limited, only 10.000 bottles per year, but the number of fans is rapidly increasing all over the world, and among them there are some real princes.

The story of this wine tells of those who start off at a disadvantage but in the end succeed. It is the story of a real challenge because Cenerentola has the harmonious vigour of the best Supertuscans but is made with only autochthonous Tuscan grapes  – Sangiovese and Foglia Tonda – the latter of which had been abandoned and has found new prospective of survival thanks to this wine.
A love story with a happy ending that transforms the Doc Orcia Cenerentola into an authentic symbol of romance. A wine that says to the loved one <<will you become my princess>> and transforms every man in love into a Prince Charming.

I adore hunting for mushrooms and in the woods around Fattoria del Colle it is easy to find them. It is very difficult for me to come home empty handed and there is no need for physical exertion either. Few porcini but many pinaroli, lecciaioli, bigine, cappelle del prete, paonazzi, ordinali, but no ovuli. I also enjoy cleaning them, when I have time. I do not eat many but I am very proud to offer them to friends especially with Pappardelle or polenta.

Polenta or “pulenda” as we say in Montalcino, is the food for when it is cold and when the North wind blows or when it snows. To cut it with a bit of thread is already a feast, if then you add a glass of Cenerentola Doc Orcia, the fairytale with the lit fireplace with the copper pot … hoping that the Prince Charming will arrive.

 

INGREDIENTS FOR POLENTA WITH MUSHROOMS

For 4 people

Easy, takes about an hour

500 g of corn flour – large grain, 15 g of extra virgin olive oil, a spoonful of coarse salt and 2 lt of water.
For the dressing: two garlic cloves, extra virgin olive oil, 500 g of mixed mushrooms (fresh or frozen), 500 g of pureed tomato, salt, grated Parmigiano.

 

PREPARING THE POLENTA WITH MUSHROOMS

Put the water in a pot, add the salt and bring to the boil. Add the oil and then the corn flour keep whipping until it comes to the boil again. Lower the flame and continue cooking while stirring for 50 minutes. You need patience and strength, and the job finishes in turning up the flame for a couple of minutes so that the polenta comes away from the rim of the pot. Pour it onto a wooden board and cut with a cotton thread then serve and eat still hot.

Each of us during the Sommelier courses listened to the instructions regarding the visual inspection of the wine with a certain condescending air.

Do not deny it; it has happened to all of us.

To begin with it is the aroma and tastes that attract attention because they are a rediscovery of the senses, that for the past century we have all used very little. Our lifestyle and the structure of our brain privilege sight, while the use of the nose and tongue has progressively been reduced to a simple “I like it” or “I don’t like it”. The Sommelier course is often a way to rediscover aromas and tastes because slowly they become understandable messages.

 

SWIRLING THE WINE IN THE GLASS

For this reason the visual analysis is often underestimated whereas listening to people such as the World Champion Sommelier Luca Martini, it is easy to understand how important this is in understanding a wine. His first suggestion is to <<look at how the wine moves in the glass>> the slowness is typical in rich wines while the watery ones with no substance are much faster. Generally filtering worsens the situation.
The legs left on the inside of the glass once the wine has swirled tell us a lot especially the way they descend. More alcoholic components there are (ethanol, glycerol) closer together the legs will be.

This is a poor dish that has become rich and has acquired dignity thanks to the new hath trends, and attention towards waste in the cuisine of the new millennium. In fact Soppressata (sausage made of lean meat and cut lard cured with salt, pepper and spices) is the poorest cold cut. It comes from cooking the left over pork pieces such as the head, rinds and tail together with spices and citrus rinds. On its own it is not a diet food, because it is very fatty, but it becomes apt for a healthy meal if you add oranges, fennel and extra virgin olive oil.
The result is a very tasty antipasto that is typically wintery. Soppressata in fact is made only in cold months and does not have the ability to be preserved for long periods of time.

 

INGREDIENTS FOR THE SOPPRESSATA SALAD

For 4 people. Very easy, just 15 minutes to prepare.

200 g of Soppressata, 2/3 oranges, 3 fennels, a few pomegranate seeds, extra virgin olive oil, salt and black pepper.

We need s good luck toast, and there is nothing better than the Brunello 2016 Prime Donne. As all wine lovers know Brunello becomes Brunello legally only at midnight of its last year. This time the new vintage to be realized has been anticipated by drum rolls and the great international wine critics have given it extraordinary ratings already before it gets released. So other than the character of the wine that brings good fortune, this time we are in admiration of a Brunello than can hopefully rid us of the dark shadow of Covid and allow us to have faith in a new year full hope.
So I will toast with Brunello Prime Donne 2016 wishing everyone health and happiness in the New Year.

 

THE END OF 2020 THE COVID YEAR

2020 is ending and it is time for considerations: except for my brother who was fortunately asymptomatic, none of us got covid19 in the family and on the estate.

The province of Siena has been one of the least hit by the pandemic but to protect ourselves we really have done our upmost; face masks, disinfectant gels , dry sanitizing guns, ozone instruments … rooms for quarantining pillows for the beds ….  Plexiglas panels, shifts in the offices …. We even sent away a tourist who was suspected of having the virus….
In the vineyards the work went ahead as usual, where the harvest was scarce in quantity but very high in quality. We are expecting 5 star rating for the vintage. The olive harvest on the other hand was very abundant in quantity and quality. White truffles unfortunately were very rare.

Wine sales went well thanks to the foreign markets that have bought and bought again an excellent Brunello 2015.He has been our champion that has conquered Covid. Wine sales in Italy and direct sales from the wineries have greatly decreased but thanks to less costs (no Prowein and Vinitaly, no trips abroad, no yearly edition of the Casato Prime Donne award …) the final economic balance of the agricultural  estate is positive.

Less so the country inn hospitality and restaurant aspects at Fattoria del Colle that worked only from halfway through July to mid October losing all foreign weddings and 70% of the normal income. Even more disastrous was the situation in the three ToscanaLovers stores, the Cortona shop practically with nil income and the other two with earnings for 2020 of about one fifth compared to usual.
